COOKING SURFACE

A perfect bake and fast heat recovery thanks to the special surface shape.
The alveolar micro-perforation keeps the pizza slightly "uplifted" allowing it to release moisture and excess of flour.
Plus, the total surface area is greater than that of a smooth surface. so the exposure to irradiation is greater, resulting in faster heat recovery.

A clever system to keep the cooking surface always hot. A gas burner placed under the deck that optimizes heating and maximizes gas yield in the oven.
