SU&GIU maintains the characteristics of the Rotoforno Classico, with the implementation of the cooking deck lift, which brings many advantages:
FLEXIBILITY: SU&GIU cooking system works with the simple physical principle that in the oven chamber the higher you go the higher the temperature will be. By this system you will get flexibility in cooking and energy saving. you will always have 3 different temperature cooking levels available at the same time, this allows to cook different styles of pizza in the same oven.
FUEL SAVING: It always cooks at the ideal temperature thanks to the SU&GIU liftable rotating surface, which can rise towards the dome to reach the heat. Therefore, you can keep the oven at low temperatures during downtime.
RESILIENCE: Rotoforno SU&GIU in addition to the continuous deck heating system, as TURBO WOOD & TURBO GAS, has an extra feature to heat the cooking deck, the lifting of the deck up to the dome, which immersed in a red-hot hood of about 1100°F and surrounded by flames will, in a matter of seconds, recover the heat needed to have the oven performing as at the beginning of the service.

PRODUCTION OPTIMIZATION: thanks to its management in automatic mode, Genius has a very high and constant production capacity. The alveolar micro-perforation keeps the pizza slightly "uplifted" allowing it to release moisture and excess of flour.
Plus, the total surface area is greater than that of a smooth surface. so the exposure to irradiation is greater, resulting in faster heat recovery.

UP&DOWN COOKING SYSTEM
Physics says that heat is stratified upwards. Consequently, the higher up inside a pizza oven, the higher the temperature. Thanks to Marana Forni’s patented SU&GIU® oven, you can manually or automatically (using the Evolution® Console) adjust the height of the pizza oven’s cooking surface.
A clever system to keep the cooking surface always hot. TurboGas is a gas burner placed under the hob that optimizes heating and maximizes gas yield in the pizza oven, thereby reducing costs. Available on all ROTOFORNO models.
It's additional heating under the hob. The embers keep the cooking deck constantly hot thanks to Turbo Wood. About 30% of the heat the wood creates comes from the embers, which by turbo wood are used as a genuine auxiliary heat source, for greater yield and consumption saving. When the embers become ashes, they fall in an ashtray under the oven, helping to keep the oven clean.
Thanks to precise control of flows, the external air needed for fuel combustion, NEVER passes above the cooking surface as in other conventional pizza ovens but directly feeds the flame through an air adjustment. The temperature inside the pizza oven is more uniform and combustion more complete with less soot.

User-friendly and practical, depending on the model the consoles come with a joystick and/or simple buttons, built so that the oven’s parameters are at your fingerprints.
The patch console lets you immediately replace the main one in case of emergency. It will allow the oven to work with basic functions, until the main console is fixed.
